I never have to wait for the fair to come to town – or spend $5 bucks for a funnel cake. I can’t believe how easy it is to make them at home. And they taste as good if not better than the ones you get at the fair.
Ingredients
6 Cups Vegetable Shortening (For frying)
1 ½ Cups Milk
2 Eggs
2 Cups Flour
1 Teaspoon Baking Powder
Pinch of Salt
¾ Cups Confectioners’ Sugar (For topping)
In your deep fryer or skillet, heat you shortening on low. Let it melt. Do not add batter until completely liquefied and started to bubble – Happens at about 375 degrees.
Meanwhile in a mixing bowl beat your eggs and milk for 2 minutes with hand mixer. All flour, baking soda, cinnamon and salt to mixture. Mix 2 more minutes with hand mixer.
If you have a funnel this works great for adding the batter to the oil. But you can also use a Ziploc bag. Fill the bag with the mixture and seal. Cut the tiniest hole in one corner of the bag.
Once your shorten is melted and hot – you are going to drizzle the batter in a web like fashion into the oil. I zigged zagged all around about 12 times to make one funnel.
Let brown on each side for about 3 minutes each.
Remove from oil and place on a paper towel and let the funnel cake drain.
I was about to make 5 cakes from the mixture.
Add sugar – sprinkling it around generously to each funnel cake.
I would recommend eating them while they are still warm. And you will have to fight the urge to only have one. They are crazy good!
